Mini Avocado and Hummus Quesadilla

The mini avocado hummus quesadillas blend the flavors of Mexican cuisine, present in tortillas, avocado, and fresh cheese with the hummus.

The combination of textures are the mixture of crunchy tortillas (grilled), with the soft and creamy filling of avocados and hummus.

How To Make Mini Avocado and Hummus Quesadilla
Take the tortillas one by one, and put them on a flat, clean surface.
Using a 7 cm diameter circular cookie cutter, make three cuts for each tortilla.
You will get 15 mini tortillas.
Place a tablespoon or two of hummus on each mini tortilla.
Spoon it over the entire mini tortilla.
Put one or two pieces of avocado on one side of the mini tortilla.
The number of avocado slices will depend on the size of the slices.
It should cover half of the mini tortilla.
On top of the avocado, place a teaspoon of grated fresh cheese, and a teaspoon of red bell pepper diced.
Fold the quesadillas.
Turn the stove on medium-high heat. Place a grill pan on the stove.
When it is hot, add the quesadillas and cook them for three minutes on each side.
Serve immediately with a sprinkle of parsley/coriander on top.

- 5 wheat flour tortillas size XL
- 1 avocado 300 g., cut into thin slices.
- ½ cup red bell pepper diced, 55 g.
- ½ cup fresh cheese grated, 110 g.
- Parsley or coriander to taste
