Keto Crackers – BEST Low Carb Cheese Crackers
Combine mozzarella cheese, cheddar jack cheese and cream cheese in a microwave safe mixing bowl. See Below for full list of ingredients and instructions.
Once all the cheese is in the mixing bowl place in microwave for 1 minute. Remove the bowl and stir the cheese. If it is not melted completely, place back in microwave on 30 second increments until it is a smooth and you can mold into a ball.
Once melted, add of a cup of almond flour to the mixing bowl. Stir the mixture well until everything is combined. It should be firm, but keep stirring. You may need to place bowl back in the microwave for 30 seconds to loosen up the cheese mixture (only if needed)
Once the flour & cheese are combined, mix in Cajun seasoning to taste preference
Mix in 1 beaten egg. It may take a few minutes of stirring to fully incorporate the egg into the mixture.
Place the ball of dough out on a baking sheet that has been lined with parchment paper. Place another piece ofparchment paper on top of the dough, and use a rolling pin to flatten it into a thin layer.
Use a cookie cutter (if you want fun shapes) or sharp knife to cut the dough into about 72 cracker squares.Peel the individual crackers off of the parchment paper, and place them on a bakingsheet lined with parchment paper. Make sure the crackers are NOT touching each other,as they will run together.
Bake the crackers for 5 minutes, remove them from the oven and turn them over, and then bake them for an additional 5 minutes.
